Potato Recipes! Potatoes are popular the world over. They are a staple food because they are so versatile. They are a blank palate that can be used to bulk up a recipe, used as the main course, a side dish, used as an appetizer or even a dessert. Potatoes are the number one crop in the world. The lack of potatoes has caused famines because they are cheap yet filling therefore a great food for the poor. But add the right ingredients and they can be a delectable dish for everyone including the middle class and wealthy. They can be mashed, baked, roasted, fried, boiled or whipped. They can be added to soups, served on the side or eaten as a main dish. Potatoes are available year-round as they are harvested somewhere every month of the year. They are economical in the grocery store and they are easy to grow on your own in a potato box for the homesteader, prepper or weekend gardener, which make them great low cost way to feed a large family on a budget.
